Recipes | Laurel's Banana Cupcakes
Heat oven to 350°F
1 – 15 oz Cameron’s Vanilla Cake Mix
1/2 cup shortening, butter or oil
2 eggs
1 cup milk or milk substitute (I have great results with Pacific Rice Milk)
2 bananas (mashed)
Blend shortening, butter or oil with eggs. Add 1/3 dry mix, then 1/3 milk (or
substitute) until all the ingredients are mixed well together. Use a ¼ cup
measure to scoop batter into lined muffin pan (will make 12 or more muffins).
Bake for 20 – 25 minutes. Tops should spring back when lightly touched.
Do not overbake.
