Laurel's Oh Oh Oatmeal Cookies
1 package Laurel's Roll 'Em Out Sugar Cookies
1 cup butter, softened
2 eggs
2 ½ cups gluten-free oats (optional to grind in blender or food processor)
6 oz semi-sweet chocolate chips
8 oz milk chocolate
1 ½ cups nuts – optional
In mixing bowl, cream butter, sugar, brown sugar, eggs and vanilla until light
and fluffy.
Blend (or sift if grinding oats up) with all dry ingredients. Add to mixing bowl
and stir on low until blended. Hand stir in chocolate and nuts (optional).
Put parchment paper on cookie sheets (baking temp is evened out) or place on an
ungreased cookie sheet. Place regular spoon size drops of cookies on sheets
separating them 2” apart. Bake at 375 degrees for 12 minutes. Do not overbake.
Cookies will continue to cook while cooling, and these are Oh Oh Oatmeal cookies
so they will be chewy.
