Recipes | Laurel's Turkey Cranberry Pancakes
Serve these pancakes warm with extra cranberry sauce.
1 cup Laurel’s Baking Flour Mix
1 egg
1/2 cup milk
1/3 cup sour cream
1/4 cup butter, melted
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp xanthan gum
1 1/2 cups chopped cooked turkey
1/2 cup cranberry sauce
2 tbsp chopped green onions
In large bowl, beat together egg, milk, sour cream and butter. Stir in flour,
baking powder and salt until blended. Fold in turkey, cranberry sauce and onion.
Heat a skillet or lightly greased griddle. Pour approx 1/4 cup of batter and
spread out to be 1/2 inch thick. Cook over medium heat for 4 minutes or until
bubbles are on top. Flip and cook for 4 minutes more or until bottom is lightly
browned.
Makes 8–10 pancakes.
